Here is a recipe with a little twist on the traditional basil pesto. CILANTRO PESTO 2 bunches of cilantro 1/2 bunch of parsley 2 Tbsp shredded ginger 1 Tbsp of parmesan cheese Pinch of pepper Pinch of salt Olive oil Soak the cilantro and parsley in a bowl of ice water. Pick the leaves from the stems and place in a food processor. Add the rest of the ingredients excluding the olive oil. Blend while slowly adding the olive oil until you reach the desired consistency. The more oil added the thinner it will be. We use this recipe at the Muskoka Bay Club for two of our dishes. In the Cliffside Grille on our Teriyaki Chicken Pizza and in the Muskoka Room in our Lemon Fettuccini Pasta.
